Baking in German

Doughs, tins and the test with a wooden skewer — a German recipe read from the top.

A German recipe is written almost entirely in the impersonal man or in the passive — der Teig wird ausgerollt — so this is a good place to meet both. The three basic doughs are kept apart by name and not by description: der Hefeteig rises, der Mürbeteig is short and der Blätterteig is layered, and a recipe assumes you know which is which.
