What holds these lists together

Three stages of a single chain, and in Portugal that is no metaphor: the label says which zone a product comes from, the delivery note which port it came through, and the recipe what to do with it. The lists share few words and still complete one another. The label is where an English speaker is most easily misled. Vinho verde is not a green wine but a protected name from the north-west of the country, and it comes white, red and rosé; DOP is simply the Portuguese form of «PDO». Whoever knows only the kitchen cannot read the label, and whoever knows only the label is stuck in the kitchen.
