When würde is the right choice
Ich würde gern kommen.
A ready-made subjunctive for every verb — used where the proper form would be unrecognisable, and not where it would not.
Every German verb has a subjunctive of its own, formed from the simple past: käme, ginge, führe, spräche. For most verbs these forms are recognisable in writing and strange in speech, and for weak verbs they are identical to the ordinary past — ich sagte is both — which makes them useless in conversation.
So German has a substitute: würde plus the infinitive. Ich würde sagen, Ich würde kommen. It works for every verb, it is unambiguous, and it is what spoken German uses almost everywhere.
Almost, but not everywhere. Eight or so verbs keep their own form because it is short, familiar and heard constantly: hätte, wäre, könnte, müsste, sollte, dürfte, wüsste, ginge. Saying Ich würde haben instead of Ich hätte is not wrong exactly, and it sounds like somebody reciting a rule.

What the proper forms look like
The verb’s own subjunctive is built from the simple past plus -e, with an umlaut where the vowel allows one: kam → käme, ging → ginge, fuhr → führe, war → wäre. Weak verbs produce nothing new, which is exactly why the würde substitute came into being.
Written German still uses the proper forms of the commonest strong verbs, so they are worth recognising: käme, ginge, gäbe, bliebe, stünde, bekäme. Producing them is optional; reading them is not, because they carry the whole unreal meaning of the sentence.

It is not the same as English "would"
English "would" also marks a repeated action in the past — "we would go there every summer" — and German never uses <z>würde</z> for that. The German is a plain past with a time word: <z>Wir fuhren jeden Sommer dorthin</z>.

The politeness ladder
From blunt to formal: <z>Hilf mir</z>, <z>Kannst du mir helfen?</z>, <z>Könntest du mir helfen?</z>, <z>Würden Sie mir bitte helfen?</z> Every step up adds either the subjunctive or the polite pronoun, and knowing where a sentence sits on that ladder is most of social German.

Two würde forms in one sentence is the mark of a learner and, increasingly, of a native speaker in a hurry. Careful German avoids it: the wenn half takes the verb’s own subjunctive and only the main half takes würde. With haben and sein this costs nothing, because hätte and wäre are shorter than the alternative anyway.
One würde per sentence, and never with hätte or wäre.
