Being polite in German
hätte, könnte, würde — the forms of a request
A handful of subjunctive forms carry almost all German politeness, and they are met long before the grammar is.
German politeness is built almost entirely from Konjunktiv II, and a beginner meets it in the first week without being told what it is: ich hätte gern, könnten Sie, ich würde sagen, wäre es möglich.
The move is the same one English makes from "can you" to "could you", and it works for the same reason: the subjunctive presents the request as hypothetical, which leaves the other person free to decline. What differs is that German expects it in more situations — in a shop, at a counter, in an email to somebody you do not know.
Five forms carry nearly all of it: hätte, wäre, könnte, würde, dürfte. They are worth learning as vocabulary rather than as grammar, and the full system of Konjunktiv II can wait until B1.

Why a hypothetical is polite
Asking directly puts the other person in the position of refusing. Asking hypothetically — "could you", "would it be possible" — describes a situation rather than making a demand, and leaves them room to say no without saying no to you. Most European languages reach for the subjunctive or the conditional for exactly this.
What differs between them is how much is expected. German uses the polite form in more everyday situations than English does, and skipping it does not read as casual but as brusque. That is why ich hätte gern is worth learning on day one, long before the grammar that produces it.

ich möchte is the other half of the pair
<z>Ich möchte</z> is the subjunctive of <z>mögen</z> and means "I would like". It competes with <z>ich hätte gern</z> and the two are near-interchangeable in a shop: <z>ich möchte einen Kaffee</z> and <z>ich hätte gern einen Kaffee</z> are both ordinary. <z>Ich möchte</z> is slightly more direct.

Do not stack the polite forms
One subjunctive is polite; three are laboured. <z>Ich würde gern einen Kaffee haben wollen</z> is grammatical and reads as somebody afraid to ask. German politeness is short — <z>ich hätte gern einen Kaffee</z> is four words and complete.

The wrong sentence is grammatically perfect and lands as a demand. Wollen states what you want; it does not ask. In a shop or a café it is what a small child says, and an adult saying it sounds either rude or foreign. The fix is three words and worth making automatic before anything else in this section.
hätte gern, not will. Könnten, not können.
