What holds these lists together

Chinese food words are built in the open: 牛肉(niúròu) is cow meat, 猪肉(zhūròu) pig meat, and 肉(ròu) on its own often means pork. Rice has three words where English has one: 米(mǐ) is the raw grain, 米饭(mǐfàn) the cooked rice, and 饭(fàn) both cooked rice and a meal, so 吃饭(chīfàn) means to eat, whatever is on the table. A dish is 菜(cài), the same word as a vegetable, which is why ordering is 点菜(diǎncài). Taste is described as a set of five — 酸(suān), 甜(tián), 苦(kǔ), 辣(là), 咸(xián): sour, sweet, bitter, hot and salty — and a menu expects you to know them. The lists run from the first meal words through the kitchen and the restaurant to the farm and the label on the packet.
