Presenting and dodging

What somebody does with a statement instead of simply making it.

The twelfth entry is esaltare, and its English look-alike is one of the costlier traps on this page, because both words are perfectly at home in a sentence about food. « To exalt » in English raises something in rank or in praise: a hymn exalts, a promotion exalts, and the word has kept the church and the throne about it. Esaltare can do that too — esaltare le virtù di qualcuno is to sing somebody’s praises — but its ordinary working sense is the one in the sentence here: to make a quality show more strongly than it did before. Il sale esalta il sapore, la luce esalta i colori, il taglio esalta la figura. Nothing is being praised; something is being brought out. English has no single verb for that and picks by context — salt brings out a flavour, light heightens a colour, a cut flatters a figure. Write « the salt exalts the flavour » and an English reader hears a hymn to the seasoning.
